Last week was bit of whirlwind: I had my first full week at my new job, the weather here was out of control amazing, and we had St. Patrick's Day and my thirtieth birthday festivities to attend to. It can be hard to stay on-track with meal preparation when your schedule is suddenly full. The easiest way for us to keep on top of things is to A) fix meals with multiple servings (leftovers!) and B) fix meals ahead of time (I'll fix dinner in the middle of the afternoon so all it needs is a little re-heating at seven!).
These were some of my favorite meals from the past week, the nachos and the mac-n-cheese combined give you eight servings. Our beet burger recipe made six patties so we had burgers for four meals and the last two patties we used as a topping on our roasted veggie salad which gave us four meals. All combined, these four dishes gave us sixteen individual servings! Not pictured: Mellow Mushroom pizza (they have vegan cheese!), some delicious homemade Ramen, and the best beet & strawberry cupcakes that Jordan baked me for my birthday - these were all so yummy that my self-control failed and any photographs faded into the land of afterthoughts.
